Seed cheeses or raw nuts offer a healthy and a great alternative to cheeses made out of dairy. The base for this vegan cheese recipe is made from cashew nuts, which gives a pretty ideal taste and texture of cheese. The taste of this vegan cheese is much stronger when compared to some of the other cheese recipes, primarily due to the addition of garlic and paprika .
This recipe is not only pretty easy to make but is also apt for a cheese platter, in a sandwich which is toasted, on crackers, with rice noodles or with zucchini pasta, as a cheesy base on a vegan pizza or wherever you would usually use grated or sliced cheese. Firstly, you will require a food processor or a powerful blender to smoothly handle the ingredients of the recipe.
You can easily prepare Paprika and Garlic Vegan Cheese at your home kitchen. Paprika cheese can be used as a filling in crepes, spread in sandwiches or as a pizza topping. The addition of paprika gives a peppery spicy flavour to the otherwise neutral flavour of cheese.

- ½ Cup Cashews
- 2 Cloves Garlic
- 2 ½ Teaspoons Paprika
- Salt to Taste
- 1 Tablespoon Olive Oil
- 1 Tablespoon Water
- Soak the cashews in water for at least 2 hours. This is quite an important step as this will lead to softening of cashews, which inturn would allow them to blend fully as no one likes to have chunks of cashews in their cheesy dips and sauces.
- Add all the others main ingredients listed above to your blender.
- Once you achieve a nice smooth cheesy mixture, taste it and add some extra salt or spice for flavouring as per your requirements.
Tip: This vegan cashew cheese will stay fresh for at least 4 days in an airtight container in the refrigerator. You can soak your cashews for 2 hours or more as this way you won’t need to chop them before blending your sauce and need to add extra water.
