When I turned vegan, I noticed that I was feeling hungry more frequently during the day than before. Due to the diet change, I also lost some weight initially. This made me worry and I ended up on the internet reading about it. It turns out it is normal and after reading a lot of experiences by fellow vegans, I came across some great posts.
Most of them recommended eating more vegetables and fruits in form of salads, soups and smoothies after regular intervals. Not too heavy but healthy. I started experimenting with different salads and dressings. Here is one the quickest salads one can make when they are in hurry and need a quick, healthy and filling side to munch on during the day.
Vegetable Salad Recipe
Ingredients:
- 1 Bowl Lettuce
- ¼ Bowl Cherry Tomatoes
- ¼ Bowl Shredded Beetroot
- ¼ Bowl Black Olives
- ¼ Bowl Carrots
- 1 Tablespoon Olive Oil
- 1 Teaspoon Lemon Juice
- Salt to Taste
- Pepper to Taste
- ¼ Cup Garlic and Fenugreek Croutons
- Lemon Zest to Taste
Instructions:
- In a bowl, add lettuce, cherry tomatoes, beetroot, black olives, carrots and croutons.
- For Dressing, add some olive oil, lemon juice, salt, pepper and lemon zest
- Toss all of them together.
- Garnish with some croutons.
